JOURNEY OF OUR BEAN

It all begins with choosing the right strain of coffee beans. At our estate in Polibetta, Coorg, we cultivate high quality Arabica (SL 795, Brazilian Catimor, Chandragiri, ) and Robusta (CxR, 274, Peridinia), taking utmost care of the little seedlings at our large nurseries. Only the healthiest baby plants are taken into the depths of the estate to be replanted, thus commencing The Flying Squirrel journey.

'Cross cropping’ is a big part of our story. We grow our coffee in the midst of citrus patches, vanilla plantations, spice patches, in heavily shaded areas, or in the wilder, more jungle-like parts of our estate, only so the finer nuances and characteristics of our final coffee have a wide canvas to develop from.

Every year, come December to late January our coffee cherries are ready for picking. And believe us, picking involves a whole lot of skill. Each cherry is chosen for it’s perfect amount of ripeness, size and colour, and only the best make it into the Picker’s basket.

This is another stage that greatly influences the kind of coffee we produce at The Flying Squirrel. Depending on what flavour profile we’re looking for from each bean, the freshly picked coffee cherries are either pulped, semi-pulped, mildly fermented, sun-dried on brick yards, either whole or washed.

Our customers get to decide what kind of coffee they’re in the mood for, and choose what grind size they would like their coffee beans to be ground in, based on the kind of brewing equipment they have. Orders are collated once a day and our roast plans are drawn up.

The green beans, which have been stored on elevated platforms in superior GrainPro bags, are roasted as per the days roast plan in our small-batch Probat roaster. We use our own time-tested proprietary profile-roasting curves to extract the desired values of each flavour element (sweetness, bitterness, fruitiness, acidity etc) for each of our variants.

Perfect evenness in grind size is achieved with the use of our superior grinding equipment. We custom-grind our beans about 5-20 minutes before packing and sealing, so the flavour and aroma stays locked in.

The Flying Squirrel coffee delivers across in India (we do have some die-hard fans who order regularly from the US, Australia and UAE too!) with most places accepting a Cash On Delivery option.
